Japanese cuisine deserves to be celebrated as one of our nation’s truly world-class cultural exports. Yet within Japan, relentless competition and a growth-at-all-costs mentality have exhausted operators, eroded workers’ pride, and fostered a culture of burnout and instability. This situation feels fundamentally wrong, and it begs the question: How did we allow it to happen?
